  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Toppings: crumbled cotija cheese

  • diced jalapeño (optional)
  • chipotle mayo
  • paprika

Instructions

  1. Boil the eggs in cold water until hard-boiled (about 10-12 minutes). Cool under cold water and peel.
  2. Slice eggs in half and scoop out yolks into a bowl. Mash yolks and mix with mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder, salt, and pepper.
  3. Fill egg whites with the yolk mixture using a spoon or piping bag.
