  • 2 Tablespoons olive oil, divided
  • 1 ½ pounds ground turkey
  • 1 Cup yellow onion, diced
  • 1 jalapeno, seeds removed and diced
  • 4 cloves garlic, minced
  • 14.5 ounce can of diced green chiles
  • 1 ½ teaspoons cumin
  • 1 ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • 315 ounce cans Cannellini beans, drained and rinsed
  • 4 Cups chicken broth
  • 1 ½ Cups frozen corn
  • ½ Cup Greek yogurt (or sour cream)

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add ground turkey; cook until browned, then transfer to a plate.
  3. In the same pot, add remaining olive oil and sauté diced onion for 5–7 minutes.
  4. Stir in jalapeno, garlic, and green chiles; cook for another 2–3 minutes.
  5. Add cumin, oregano, cayenne pepper, and salt; stir for 1 minute.
  6. Mix in Cannellini beans and chicken broth; bring to a simmer.
  7. Return turkey to the pot along with frozen corn; cook for additional 10 minutes.
  8. Stir in Greek yogurt or sour cream right before serving.
