  • 4 large bell peppers (any color)
  • 1 cup cooked rice (white, brown, or wild)
  • 1 tablespoon olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic (minced)
  • 1/2 cup diced zucchini
  • 1/2 cup diced mushrooms
  • 1/2 cup canned diced tomatoes (drained)
  • 1/2 cup black beans (or chickpeas, rinsed and drained)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella or cheddar cheese (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic; sauté until translucent.
  3. Stir in zucchini, mushrooms, diced tomatoes, black beans (or chickpeas), paprika, cumin, salt, and pepper. Cook for about 5–7 minutes until softened.
  4. Mix the cooked rice into the vegetable filling until well combined.
  5. Stuff each pepper with the filling mixture and place them upright in a baking dish. If desired, sprinkle cheese on top.
  6. Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until peppers are tender.
  7. Garnish with fresh herbs before serving.
