  • 3 medium sweet potatoes (diced)
  • 2 cans coconut milk (full-fat)
  • 1/2 cup unsweetened almond milk
  • 1 russet potato (cubed)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 teaspoon fresh lime juice
  • 1/4 cup fresh basil (roughly chopped)
  • Chopped cashews (optional)
  • Chopped fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add minced garlic and chopped onions; sauté until translucent (about 2–3 minutes).
  2. Stir in grated ginger, ground turmeric, kosher salt, black pepper, and diced sweet potatoes. Cook for 5–7 minutes until fragrant.
