  • 2 cups of cooked short grain or sushi brown rice
  • 1 tablespoon rice vinegar (divided use)
  • 1 teaspoon of sugar (or low-calorie sweetener)
  • 1/4 teaspoon salt (plus more to taste)
  • 8 ounces of seafood such as tuna or salmon sashimi (or crab meat, cooked shrimp, or marinated tofu)
  • 1 cup of peeled diced cucumber
  • 1/2 of an avocado (thinly sliced)
  • 1 sheet of nori seaweed (cut into strips)
  • 2 teaspoons sesame seeds
  • 1 tablespoon green onions
  • 2 teaspoons sesame oil
  • Wasabi paste (optional; soy sauce and/or pickled ginger)

Instructions

  1. Prepare the Rice: In a bowl, mix cooked brown rice with 1/4 teaspoon salt, 1 tablespoon rice vinegar, and 1 teaspoon sugar until well combined. Divide between two bowls.
  2. Mix the Cucumbers: Combine diced cucumber with sesame oil, sesame seeds, and additional rice vinegar in a small bowl. Toss gently.
  3. Assemble Your Bowls: Layer cucumbers over the rice. Add your choice of seafood and avocado slices on top. Garnish with green onions and nori strips.
  4. Serve: Enjoy immediately with optional wasabi paste and soy sauce.
