  • 1 pound 95% Lean Ground Beef
  • 1 teaspoon Dried Oregano
  • 1 tablespoon Smoked Paprika
  • ½ teaspoon Ground Cumin
  • Kosher salt and pepper (to taste)
  • 6 Cups Homemade or low-sodium broth
  • 28 oz Crushed Tomatoes (12 cans)
  • 1 Cup Brown Rice (or quinoa)
  • ½ Cup Shredded Cheddar Cheese
  • 2 tablespoons Freshly Chopped Parsley (to garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped bell peppers, onion, and minced garlic; sauté until softened (about 5 minutes).
  2. Stir in lean ground beef and seasonings (oregano, smoked paprika, cumin, salt, and pepper) until the meat is browned (5-7 minutes).
  3. Add low-sodium broth, crushed tomatoes, and brown rice; bring to a boil then reduce to a simmer. Cover and cook for about 30 minutes until rice is tender.
