  • 2 16 oz bags Frozen Vegetables
  • 8 oz Whole grain Soba noodles
  • 10 oz Vegetable noodles (zucchini, carrot, kohlrabi)
  • 4 large garlic cloves, minced
  • 1/2 cup coconut aminos
  • 2 tbsp rice vinegar
  • 1.5 lbs chicken breast
  • 3 tbsp olive oil
  • Chives or green onions (optional for topping)

Instructions

  1. Heat 2 tbsp olive oil in a pan over medium heat and cook the chicken breasts for about 5-6 minutes on each side until golden brown. Transfer to a cutting board and chop into bite-sized pieces.
  2. In a large pot of boiling water, cook soba noodles according to package instructions (about 8-10 minutes). Drain and set aside.
  3. In the same pan used for cooking chicken, add an additional tablespoon of olive oil and toss in the frozen vegetables. Cook until heated through.
  4. Add the vegetable noodles to the pan and sauté for about 3-4 minutes until tender yet crunchy.
  5. Stir in coconut aminos, rice vinegar, and minced garlic; cook for an additional few minutes until fragrant.
  6. Combine cooked soba noodles and chopped chicken with the vegetables in the pan; toss gently to coat with sauce before serving.
