  • 0.5 teaspoon garlic salt
  • 0.5 teaspoon celery salt
  • 0.25 cup flour
  • 36 tablespoons olive oil
  • 2 cups yellow onions (diced)
  • 4 cloves garlic (minced)
  • 4 cups beef broth
  • 5 medium carrots (cut into chunks)
  • 1 pound baby Yukon gold potatoes (halved or quartered)
  • 1 cup frozen peas

Instructions

  1. Cut the stew meat into 1-inch cubes and season with black pepper, garlic salt, and celery salt.
  2. Sprinkle flour over the seasoned meat and toss to coat.
  3. Heat olive oil in a skillet over medium-high heat; brown the meat in batches.
  4. In the same skillet, sauté onions until soft, then add minced garlic for an additional minute.
  5. Transfer browned meat, sautéed onions, garlic, beef broth, carrots, and potatoes to the slow cooker.
  6. Cook on low for 7½ to 8 hours or high for 3½ to 4 hours until vegetables are tender.
  7. Stir in frozen peas during the last 15 minutes of cooking.
