  • 1/4 cup almond flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 large shallot, thinly sliced
  • 2 tsp minced garlic
  • 1/4 cup white cooking apple vinegar
  • 1 tbsp lemon juice
  • 1/2 cup bone broth
  • 1/2 cup heavy whipping cream
  • 1/4 cup capers
  • 1 can palmini linguini noodles, drained and rinsed well

Instructions

  1. Season chicken cutlets with salt and pepper.
  2. Dredge each cutlet in almond flour.
  3. Heat butter and olive oil in a skillet over medium-high heat.
  4. Cook chicken for 3-5 minutes on each side until golden brown; then keep warm.
