  • 3/4 Cup Red Bell Pepper
  • 3/4 Cup Green Bell Pepper
  • 1 Cup Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 2 Cups Baby Spinach
  • 12 ounces Chicken Sausage
  • 12 Eggs
  • 16 ounces Cottage Cheese
  • ½ Cup Milk
  • â…“ Cup All Purpose Flour
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper
  • 1 ½ Cups Shredded Cheddar Cheese, divided

Instructions

  1. Preheat the oven to 350F and prepare a 9×13 baking dish with nonstick spray.
  2. Sauté diced red and green bell peppers and onion in olive oil for 5–7 minutes until softened.
  3. Add minced garlic and spinach; cook until spinach wilts.
  4. Cool the vegetable mixture slightly before transferring to a bowl.
  5. Cook chicken sausage in the same skillet until browned, then mix with the cooled veggies.
  6. In a large bowl, whisk together eggs, cottage cheese, milk, flour, salt, and pepper until smooth.
  7. Fold in the vegetable-sausage mixture and one cup of cheddar cheese.
  8. Pour into the baking dish; top with remaining cheese.
  9. Cover with foil and bake for 30 minutes; uncover and bake for an additional 20–25 minutes until golden brown.
