  • 2 tbsp olive oil (divided)
  • 2 chicken breasts (cut into small bite-size pieces)
  • 1 tbsp taco seasoning mix
  • 1 red bell pepper (diced)
  • 4 tbsp sweet chili sauce
  • 4 tbsp tomato passata
  • 4 green onions (sliced)
  • 4 large flour tortillas (or GF tortilla)
  • 2 cups shredded Monterey Jack cheese or Mexican blend

Instructions

  1. Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat. Add the chicken pieces and sprinkle with taco seasoning. Cook for about 6-8 minutes, stirring often until fully cooked.
  2. Stir in the diced red bell pepper and cook for an additional 2 minutes until slightly softened.
  3. Remove from heat and mix in sweet chili sauce, tomato passata, and sliced green onions.
  4. Lay one tortilla on a sheet pan, spread half with the chicken mixture, top with cheese, and fold over. Repeat with remaining tortillas.
  5. Clean the pan, drizzle in more oil, and cook each folded quesadilla over medium-low heat until golden brown on both sides, about 3-4 minutes per side.
  6. Serve warm with salsa or guacamole.
