  • 1 pound penne pasta
  • 2 pounds chicken breasts (thinly sliced)
  • 8 ounces fresh basil leaves
  • 3/4 cup extra virgin olive oil
  • 1/3 cup pignoli nuts
  • 1 clove garlic (grated)
  • 1/4 cup Parmigiano Reggiano
  • 1/4 cup Pecorino Sardo

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a food processor, blend fresh basil leaves, olive oil, pignoli nuts, and grated garlic until smooth. Add cheese and pulse again; adjust salt to taste.
  3. Heat olive oil in a large pan over medium heat. Season chicken with salt and pepper, then sear until cooked through (about 3 minutes per side). Slice into strips.
  4. In a large bowl, combine cooled pasta, sliced chicken, and half the pesto. Mix well and season to taste with additional pesto and salt.
