  • 1.25 pounds boneless skinless chicken breasts
  • Kosher salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 34 garlic cloves (minced)
  • 1 tablespoon cornstarch
  • 3 tablespoons aged balsamic vinegar
  • 1 tablespoon honey (heaping)
  • 1 cup chicken broth
  • 1 tablespoon finely chopped parsley (optional for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large pan over medium-high heat. Sear the chicken for about 5-6 minutes on each side until golden brown. Remove and cover to keep warm.
  3. In the same pan, sauté sliced mushrooms for about 3-4 minutes until soft. Add minced garlic and cornstarch; sauté for another minute.
  4. Whisk together aged balsamic vinegar and honey in a small jug, then pour into the pan with mushrooms.
  5. Stir continuously until the mixture thickens (approximately 2 minutes).
  6. Add chicken broth and simmer for about 3-4 minutes until the sauce thickens.
  7. Return chicken to the pan, spooning sauce over it. Garnish with parsley before serving.
