  • 3 cups cooked brown rice
  • 3/4 pound boneless, skinless chicken breast (cut into bite-size pieces)
  • 1 tablespoon vegetable oil (divided)
  • 1 egg (scrambled)
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 3 tablespoons low sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • Salt and pepper to taste
  • Sliced green onions for garnish (optional)

Instructions

  1. Heat 2 teaspoons of vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and sauté for about 4-5 minutes until browned and cooked through. Season with salt and pepper.
  2. Remove the cooked chicken from the skillet and cover to keep warm.
  3. Wipe out the skillet and add the remaining teaspoon of oil. Sauté the onion and carrots for about 3-5 minutes until softened.
  4. Return the chicken to the skillet along with the cooked brown rice, scrambled egg, and frozen peas. Stir in soy sauce and sesame oil until well combined.
  5. Taste and adjust seasoning if necessary, then garnish with sliced green onions before serving.
