  • 2 pounds Ground Chicken (or turkey)
  • 2 Large Eggs
  • 1¼ Cups Panko Breadcrumbs (divided)
  • 1 Cup Hot Sauce (divided)
  • ¼ Cup Chopped Green Onion
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • Kosher salt and pepper (to taste)
  • ½ Cup Crumbled Blue Cheese
  • ½ Cup Greek Yogurt
  • 1 tablespoon White or apple vinegar
  • Celery, cucumber, and/or carrot sticks (for serving)

Instructions

  1. Prepare the blue cheese dip by whisking together Greek yogurt, vinegar, salt, and pepper in a small bowl. Fold in crumbled blue cheese and refrigerate.
  2. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  3. In a large bowl, whisk the eggs. Combine ground chicken, green onion, 1 cup of panko breadcrumbs, beaten eggs, and one-third of the hot sauce.
  4. Add garlic powder, onion powder, along with salt and pepper. Mix until just combined.
  5. Form meatballs about 1-1/2 inches in diameter by rolling the mixture in your hands and coat them with the remaining panko breadcrumbs.
  6. Place meatballs on the prepared tray, spray lightly with cooking oil, and bake for 12 minutes.
  7. Toss cooked meatballs in the remaining hot sauce and bake for an additional 5-6 minutes until fully cooked.
