  • 4 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 tablespoon lemon zest
  • 1 teaspoon oregano
  • 1.5 cups grated smoked mozzarella cheese
  • 0.25 cups grated pecorino or Parmesan cheese
  • 2 cloves garlic, minced
  • 0.25 teaspoon red pepper flakes
  • 0.75 teaspoon sea salt
  • Fresh spinach (1 pound)
  • 1 pound ziti pasta

Instructions

  1. 1. Cook the ziti pasta in salted water until al dente; drain without rinsing.
  2. 2. Sauté minced garlic in olive oil, add fresh spinach, and cook until wilted.
  3. 3. In a bowl, mix ricotta cheese with lemon zest, oregano, red pepper flakes, sea salt, black pepper, and half of the smoked mozzarella along with the sautéed spinach.
  4. 4. Preheat oven to 375°F (190°C). Layer marinara sauce in a baking dish, followed by half of the ziti and then half of the cheese-spinach mixture; repeat layers.
  5. 5. Cover with foil and bake for 20 minutes; then uncover and bake for another 10 minutes until golden.
  6. 6. Let cool slightly before serving; garnish with olive oil and fresh herbs.
