  • 4-pound bone-in lamb shoulder
  • 4 large garlic cloves, roughly chopped
  • 1/2 cup chopped, oil-packed sun-dried tomatoes
  • 1/3 cup fresh mint leaves
  • 1/3 cup fresh parsley
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 2 large yellow onions, peeled and cut into thick rings
  • 1 tablespoon sugar
  • 1 tablespoon low sodium soy sauce
  • 2 lemons, juiced
  • 1/4 cup hot water
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup water

Instructions

  1. Remove the lamb from the fridge an hour before cooking to bring it to room temperature.
  2. Preheat your oven to 450°F (232°C).
  3. In a blender, combine Worcestershire sauce, apple cider vinegar, sugar, soy sauce, garlic, sun-dried tomatoes, mint, parsley, lemon juice, and hot water; pulse until chunky.
  4. Season the lamb by rubbing it with olive oil, salt, and pepper. Coat half of the marinade over the lamb.
  5. In a roasting pan, layer onion rings and smashed garlic at the bottom. Place the seasoned lamb on top.
  6. Pour water into the pan and cover tightly with foil. Roast at 350°F (177°C) for about 3 hours.
  7. After three hours, remove the foil and increase heat to 425°F (218°C). Roast uncovered for another 20-25 minutes until browned.
  8. Let the lamb rest for about 20 minutes before serving with reserved sauce.
