  • 3 pounds bone-in chicken thighs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion (diced)
  • 6 cloves garlic (minced)
  • 4 medium carrots (peeled and sliced)
  • 1.5 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves
  • 0.5 teaspoon fresh rosemary (minced)
  • 3 medium red potatoes (quartered)
  • 3 bay leaves
  • 5 cups chicken broth (divided)
  • 0.33 cup all-purpose flour
  • 1 cup frozen peas
  • 0.25 cup Italian parsley (finely chopped)

Instructions

  1. 1. Season chicken thighs with salt and pepper. Heat olive oil in a skillet over medium heat and sear chicken until golden brown on both sides. Transfer to the slow cooker.
  2. 2. In the same skillet, sauté diced onions and sliced carrots for about five minutes until softened. Add minced garlic, thyme, and rosemary; cook until fragrant. Stir in tomato paste and deglaze with some chicken broth before adding everything to the slow cooker.
  3. 3. Add quartered potatoes and remaining chicken broth to the slow cooker along with bay leaves. Cover and cook on HIGH for four hours.
  4. 4. Mix flour with reserved broth to create a slurry about three-and-a-half hours into cooking. Add slurry and frozen peas to the slow cooker for the last 30 minutes.
  5. 5. Remove chicken from the pot, shred it off the bones, and return it to the stew along with chopped parsley before adjusting seasoning.
  6. 6. Serve warm with crusty bread or over rice.
