  • 1/2 cup creamy or crunchy peanut butter (about 125g)
  • 1/4 cup coconut sugar or brown sugar (about 50g)
  • 1/4 cup unsweetened applesauce (about 60g)
  • 1/2 cup almond milk (about 120ml)
  • 2 1/2 cups old-fashioned whole oats or quick oats (about 213g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips (about 180g)

Instructions

  1. Preheat your oven to 350°F (177°C) and line a 9-inch square baking pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Mix in peanut butter, coconut sugar, applesauce, almond milk, baking powder, cinnamon, and vanilla extract until well combined.
  4. Stir in the oats and chocolate chips until evenly distributed.
  5. Pour the mixture into the prepared pan and spread it evenly.
  6. Bake for about 25-28 minutes or until the center is set.
  7. Allow to cool at room temperature for about an hour before chilling in the refrigerator for an additional hour before cutting into bars.
