  • 2 teaspoons gochujang (Korean hot pepper paste)
  • 1 tablespoon soy sauce
  • 4 cloves garlic, minced
  • ⅓ cup brown sugar
  • ¾ cup beef broth or water
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons grated fresh ginger
  • ⅓ cup thinly sliced green onions
  • ½ cup finely crushed buttery round crackers (such as Ritz®)
  • 4 cloves garlic, minced
  • 2 tablespoons rice apple vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon Sriracha hot sauce
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • Toasted sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine ground beef, gochujang, soy sauce, minced garlic, kosher salt, black pepper, grated ginger, sliced green onions, and crushed crackers until well mixed.
  2. Shape the mixture into small meatballs (about 1 inch in diameter) and place them on a lined baking sheet.
  3. Bake for approximately 20 minutes until cooked through (internal temperature reaches 160°F).
  4. For the Spicy Mayo Dip: In a bowl, whisk together minced garlic, rice apple vinegar, beef broth (or water), brown sugar, soy sauce, gochujang, sesame oil, Sriracha hot sauce, cornstarch mixed with water until thickened.
  5. Serve the meatballs drizzled with the dip and garnished with toasted sesame seeds.
