  • 2 cups yellow onion, diced

  • 1 cup red bell pepper, diced
  • ¼ cup cilantro, minced
  • 1 tablespoon garlic, minced
  • 2 ½ teaspoons coarse kosher salt
  • 2 ½ teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1/16 teaspoon cayenne pepper
  • 2 tablespoons tomato paste
  • 6 cups reduced sodium chicken broth
  • 4.5 ounces can green chilies
  • ¼ teaspoon sugar
  • 2 cans 15-ounce navy beans, rinsed
  • 1 can 15-ounce black beans, rinsed
  • 1 can 15-ounce yellow corn, rinsed
  • 4 cups shredded chicken or turkey
  • 2 tablespoons fine yellow cornmeal
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 2 tablespoons freshly squeezed lemon juice
  • ½ cup tortilla strips

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion, celery, red bell pepper, and minced cilantro until softened (about 5 minutes).
  2. Add minced garlic and spices (salt, chili powder, cumin, cayenne). Stir constantly until fragrant.
  3. Mix in tomato paste and cook for 2 minutes.
  4. Deglaze the pot with ¼ to ½ cup chicken broth, scraping up any brown bits.
  5. Add remaining chicken broth, green chilies, sugar, navy beans, black beans, corn, and shredded chicken. Stir well.
  6. Create a slurry by mixing cornmeal with warm water; add this to the soup and stir.
  7. Bring to a boil, reduce heat to simmer for 30 minutes while tasting and adjusting seasonings as needed.
  8. Whisk sour cream with hot broth until smooth; stir in heavy cream and lemon juice.
  9. Serve hot topped with tortilla strips.
