  • 1 tablespoon Kikkoman® Sesame Oil
  • 1 tablespoon ginger, minced
  • 2 teaspoons garlic, minced
  • ½ cup carrots, shredded
  • 4 ounces shiitake mushrooms, stems removed and sliced
  • 2 cups bok choy, chopped
  • 6 cups low sodium chicken or vegetable broth
  • ¼ cup Kikkoman® Rice Vinegar
  • 2 tablespoons Kikkoman® Soy Sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Kikkoman® Sriracha Hot Chili Sauce
  • 1 pound frozen potstickers (chicken, beef, or vegetable)
  • 1 tablespoon cornstarch
  • ¼ cup cold water
  • ¼ cup green onions, chopped

Instructions

  1. In a large pot, heat 1 tablespoon of sesame oil over medium heat.
  2. Add 1 tablespoon minced ginger and 2 teaspoons minced garlic; sauté until fragrant.
  3. Stir in ½ cup shredded carrots and 4 ounces sliced shiitake mushrooms; cook for about 3 minutes until softened.
  4. Pour in 6 cups of low sodium chicken or vegetable broth along with ¼ cup rice vinegar, 2 tablespoons soy sauce, 2 tablespoons brown sugar, and 1 tablespoon sriracha. Bring to a simmer.
  5. Gently add in 1 pound frozen potstickers and 2 cups chopped bok choy; cook for about 5-7 minutes until heated through.
  6. In a small bowl, mix 1 tablespoon cornstarch with ¼ cup cold water until smooth. Slowly stir into the soup to thicken; simmer for another couple of minutes.
  7. Garnish with chopped green onions before serving.
