  • 1/4 C unsalted butter (softened)
  • 1/2 C granulated sugar
  • 1/4 C light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder

  • 1/8 tsp all spice
  • pinch ground cloves
  • 1 1/4 C all purpose flour
  • 2/3 C sour cream
  • 2 C apples (peeled and chopped into small chunks)
  • 1/2 C apple cider (or juice or water)
  • 1/4 C light brown sugar
  • 1/2 tsp cinnamon
  • 1 Tbsp cornstarch
  • 2 Tbsp all purpose flour
  • 1 Tbsp granulated sugar
  • 1 Tbsp light brown sugar
  • 1/8 tsp cinnamon
  • 23 Tbsp old fashioned oats
  • 1 Tbsp unsalted butter (melted)
  • 6 oz cream cheese (softened)
  • 1/4 C unsalted butter (softened)
  • 4 C powdered sugar
  • 3 Tbsp caramel sauce (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and light brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In another bowl, combine flour, baking powder, salt, cinnamon, all spice, and ground cloves. Gradually mix into the butter mixture alternately with sour cream until just combined.
  4. Prepare the apple filling by cooking chopped apples with apple cider, brown sugar, cinnamon, and cornstarch over medium heat until thickened.
  5. Fill each cupcake liner halfway with batter, add a spoonful of apple filling on top, and cover with more batter. Sprinkle crisp topping over each cupcake.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Let cool completely before frosting.
  7. For the frosting, beat cream cheese and softened butter until smooth; gradually add powdered sugar then drizzle in caramel sauce.
