  • 3 Cups Baby Carrots
  • 2 Cups Mushrooms (Sliced)
  • 2 Cups Beef Broth
  • 1 Cup Apple Vinegar (Optional)
  • 2 Tbsp Tomato Paste
  • 3 Tbsp Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 Tbsp Garlic (Minced)
  • Salt (To Taste)
  • Pepper (To Taste)

Instructions

  1. Season the short ribs with salt and pepper. Sear them in a skillet over medium heat until browned on all sides (about 20 seconds per side).
  2. Transfer the seared ribs to your crockpot and add carrots, mushrooms, beef broth, apple vinegar, tomato paste, butter, bay leaf, thyme, minced garlic, salt, and pepper.
  3. Cook on low for approximately 8 hours until the meat is tender and falls off the bone.
