  • 1 head cauliflower (cut into small florets)
  • 2 tbsp olive oil
  • 1 tbsp za’atar (divided)
  • 2 tsp smoked paprika (divided)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and black pepper (to taste)
  • For the spiced oil: 1 tbsp water, ¼ cup olive oil, ½ tbsp za’atar, ½ tsp smoked paprika, 1 microplaned garlic clove, chopped parsley (or cilantro)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, half of the za’atar, half of the smoked paprika, onion powder, garlic powder, salt, and pepper until fully coated.
  3. Spread seasoned florets on a lined baking sheet in a single layer and roast for 25-30 minutes until golden brown and tender; flip halfway through.
  4. For spiced oil, mix water with olive oil, remaining za’atar, remaining smoked paprika, microplaned garlic, parsley (or cilantro), salt, and pepper in a bowl.
  5. Drizzle warm spiced oil over roasted cauliflower and serve with hummus.
