  • ¼ cup sun-dried tomatoes (chopped)
  • 1 tablespoon tomato paste
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • 1¼ cup vegetable broth
  • 1 tablespoon arrowroot starch
  • 2 cups baby greens (like baby arugula or spinach)
  • ¼ cup vegan cream cheese
  • Salt and pepper to taste
  • Juice of 1 small lemon
  • Fresh basil for garnish

Instructions

  1. In a medium saucepan over medium heat, add 1 tablespoon of avocado or olive oil. Sauté the sliced onion for about 3 minutes until translucent.
  2. Add halved cherry tomatoes and cook for an additional 5 minutes, stirring frequently.
  3. Stir in minced garlic, chopped sun-dried tomatoes, and tomato paste; cook for one minute until fragrant.
  4. In a small bowl, whisk the arrowroot starch with a splash of vegetable broth until smooth, then mix into the rest of the broth.
  5. Pour the broth mixture into the pan along with the drained cannellini beans and simmer on low for about 5 minutes until slightly thickened.
  6. Stir in vegan cream cheese until melted, then fold in baby greens until wilted (about one minute). Finish with lemon juice, salt, and pepper to taste. Garnish with fresh basil before serving.
