  • 2 tbsp olive oil
  • 1 large onion (chopped)
  • 2 celery stalks (chopped)
  • 3 medium carrots (peeled and finely chopped)
  • 34 cloves garlic (smashed and minced)
  • 1 red bell pepper (diced)
  • 3 cups leftover cooked turkey (shredded)
  • 1 cup basmati rice
  • 5 cups broth or stock
  • 8 oz coconut cream (one can)
  • 1 large lemon (juiced)
  • 1 tsp kosher salt (or to taste)
  • 1/2 tsp ground pepper
  • 1 tsp fresh rosemary (chopped)
  • 1 tbsp fresh sage (chopped)
  • 5 sprigs fresh thyme (leaves picked)
  • 1 bay leaf
  • 1 tbsp GF flour

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, celery, carrots, red bell pepper, and minced garlic for 4-5 minutes until softened.
  2. Stir in basmati rice and cook for 1-2 minutes until lightly toasted.
  3. Add shredded turkey, salt, pepper, herbs, and broth; mix well and bring to a boil.
  4. Whisk gluten-free flour with 2 tablespoons of water in a small bowl; stir into the boiling soup to thicken.
  5. Once boiling, reduce heat and add coconut cream and lemon juice; simmer on low for 18-20 minutes or until rice is tender.
  6. Remove bay leaf before serving; adjust seasoning if needed.
