  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 tsp kosher salt
  • 16 oz mascarpone cheese (softened)
  • 3/4 cup heavy cream (for filling)
  • 1 cup strong coffee (cooled)
  • 2 tbsp sugar (for coffee mixture)
  • 1 package savoiardi ladyfingers (7 oz)
  • 3/4 cup heavy cream (for topping)
  • 3 tbsp powdered sugar (for topping)

Instructions

  1. In a mixing bowl, combine the pumpkin puree, brown sugar, granulated sugar, spices, and kosher salt. Mix until smooth. Fold in the softened mascarpone cheese until well combined.
  2. In another bowl, whip 3/4 cup of heavy cream until stiff peaks form. Gently fold into the pumpkin mixture.
  3. In a shallow bowl, mix together your cooled strong coffee with 2 tablespoons of sugar until dissolved.
  4. Dip ladyfingers quickly into the coffee mixture and layer half in your serving dish. Spread half of the pumpkin filling over them. Repeat with remaining ladyfingers and filling.
  5. Cover and refrigerate for at least 6 hours or overnight. Before serving, whip additional 3/4 cup heavy cream with 3 tbsp powdered sugar to top the tiramisu.
