  • Fresh rosemary, thyme, and sage sprigs
  • Kosher salt and pepper (to taste)
  • 1 ½ cups potatoes (peeled and diced)
  • 1 ½ cups sweet potatoes (peeled and diced)
  • 1 red bell pepper (finely diced)
  • 3 cups chicken broth or stock
  • 1 cup frozen peas
  • 4 ounces cream cheese

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add diced chicken breast seasoned with Italian seasoning, salt, and pepper; cook until golden brown on all sides (about 4-5 minutes). Remove and set aside.
  2. In the same pot, add diced onion, carrots, and celery; sauté for about 3-4 minutes until softened.
  3. Sprinkle gluten-free flour over the veggies; cook for an additional minute before adding chicken broth. Stir to combine.
  4. Add the potatoes, sweet potatoes, red bell pepper, browned chicken, and herb sprigs; mix well. Bring to a boil then reduce heat to simmer for about 30 minutes.
  5. Remove herb sprigs; stir in frozen peas and cream cheese until melted and creamy.
  6. Serve warm garnished with parsley if desired.
