  • ½ cup fresh orange juice
  • Zest of one orange
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup unsalted butter (softened to room temperature and cut into 4 slices)

  • 1 and ½ cups crushed gingersnap cookies (about 25 cookies)
  • â…“ cup firmly packed light or dark brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 5 Tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Mix crushed gingersnap cookies with brown sugar, cinnamon, ground ginger, and melted butter. Press firmly into a tart pan and bake for 10 minutes.
  2. In a saucepan, cook cranberries with orange juice until they burst. Strain to obtain smooth juice.
  3. Whisk together sugar, eggs, egg yolks, softened butter, salt, and orange zest until creamy. Gradually add the cranberry juice and cook gently over low heat until thickened.
  4. Pour curd into the cooled crust and chill for at least two hours before serving.
