  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon pepper
  • 1 lb ground turkey sausage
  • 2 tablespoons butter
  • 1 yellow onion, diced
  • 1/2 cup diced carrots
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce
  • 5 cups chicken broth
  • 1 cup coconut milk
  • 1 1/4 lbs red potatoes, cut into 1-inch cubes
  • 2 cups shredded cheddar cheese (optional)

Instructions

  1. In a large pot over medium heat, cook the ground turkey sausage until browned, breaking it apart as it cooks (about 10-12 minutes). Set aside.
  2. In the same pot, melt 2 tablespoons of butter. Add diced onions, celery, and carrots; sauté for 5 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Add 3 tablespoons of flour to the vegetables and cook for 2 minutes. Gradually pour in 5 cups of chicken broth while scraping the bottom of the pot to incorporate any flavorful bits. Stir in 1 cup of coconut milk, along with soy sauce, hot sauce, and dried herbs.
  4. Bring to a boil, then reduce heat to simmer. Add 1¼ lbs of cubed red potatoes and cook uncovered for about 20-25 minutes until fork-tender.
  5. Stir in the cooked sausage and allow to heat through before serving.
