  • 1/4 cup cashew butter (or other nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a mixing bowl, combine non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup. Mix until smooth.
  2. Line a baking sheet with parchment paper and scoop dollops of the mixture onto it, leaving space between each scoop.
  3. Freeze for at least 1 hour until solid.
  4. Melt chocolate chips with coconut oil until smooth using a microwave or double boiler.
  5. Dip each frozen yogurt bite into the melted chocolate, then return to the baking sheet and freeze again for 30 minutes until the chocolate hardens.
