  • 2½ tsp active dry yeast
  • 1 tsp vanilla extract
  • 1 egg (or flaxseed mixture for vegan option)
  • ⅓ cup coconut oil
  • 1 cup sugar (for filling)
  • 2 cups shredded coconut
  • 3 Tbsp heavy cream (or plant-based alternative)
  • 1 cup powdered sugar

Instructions

  1. Prepare the potatoes by peeling and boiling until tender; reserve some cooking water.
  2. Activate the yeast by mixing it with warm reserved potato water and sugar.
  3. Warm the mashed potatoes with milk, butter, salt, and half a cup of sugar.
  4. Combine the potato mixture with activated yeast and gradually add flour to form a slightly sticky dough; knead for five minutes.
  5. Let the dough rise in a buttered bowl until doubled in size (1 to 1.5 hours).
  6. Roll out the dough into an 18-inch square and spread melted coconut oil followed by sugar and shredded coconut.
  7. Roll into a log, slice into twelve pieces, and let rise again before baking at 375°F for about twenty minutes.
  8. Prepare glaze by combining powdered sugar with heavy cream and drizzle over warm rolls.
