  • 4 boneless skinless chicken breasts
  • ½ cup olive oil
  • 2 tablespoons Dijon mustard
  • Juice of 1 lime
  • Juice of 1 lemon
  • Juice of 2 oranges
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme (finely chopped or additional ¼ teaspoon dried herbs)
  • 1 teaspoon fresh oregano (finely chopped or additional ¼ teaspoon dried herbs)
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. In a bowl, whisk together olive oil, Dijon mustard, lime juice, lemon juice, orange juice, salt, garlic powder, thyme, oregano, and crushed red pepper flakes until well combined.
  2. Place chicken breasts in a zip-close bag or bowl and pour most of the marinade over the top (reserve about ¼ cup). Ensure they’re well coated and marinate in the refrigerator for at least one hour.
  3. Preheat your grill to medium heat and oil the grates to prevent sticking.
  4. Grill chicken for 5-7 minutes on each side, brushing reserved marinade on as you flip until cooked through (internal temperature should be 165°F).
  5. Allow chicken to rest for a few minutes before slicing and serve with fresh herbs and citrus wedges.
