  • 1 bunch cilantro
  • 4 garlic cloves (peeled)
  • 1 lime (juiced)
  • 1 tablespoon apple cider vinegar
  • 4 tablespoons olive oil
  • 1 jalapeño or red chili (seeded and coarsely chopped)
  • Kosher salt and pepper (to taste)
  • 4 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup corn kernels
  • 1 large avocado (diced)

Instructions

  1. In a food processor, blend together cilantro, garlic, lime juice, apple cider vinegar, olive oil, jalapeño (if using), salt, and pepper until smooth to create the marinade.
  2. Coat the chicken breasts with half of the marinade in a bowl and refrigerate for at least one hour.
  3. Preheat the grill to medium heat and grill the marinated chicken for about 12-14 minutes until cooked through.
  4. Meanwhile, combine spinach, cherry tomatoes, corn, and avocado in a large bowl.
  5. Slice the grilled chicken and place it on top of the salad mixture. Drizzle with reserved marinade before serving.
