  • 1/2 teaspoon fine sea salt
  • 6 tablespoons (85 grams) unsalted butter, melted
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (170 grams) semisweet chocolate chips
  • 1/4 cup (32 grams) all-purpose flour (for topping)
  • 2 tablespoons brown sugar (for topping)
  • 1/2 cup toffee bits (for topping)
  • 1 tablespoon butter, at room temperature (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, brown sugar, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, buttermilk, eggs, and vanilla until well blended.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined; then fold in chocolate chips.
  5. For the topping, mix flour, brown sugar, toffee bits, and room-temperature butter until crumbly.
  6. Fill each muffin cup about two-thirds full with batter and sprinkle generously with the topping.
  7. Bake for 20 minutes or until a toothpick inserted comes out clean. Allow cooling slightly before serving.
