  • 2 tablespoons olive oil
  • 1/2 cup black beans (canned, rinsed, and drained)
  • 1/2 cup corn (fresh or canned)
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1 diced jalapeño pepper
  • 2 tablespoons chopped fresh cilantro
  • 1/3 cup frozen spinach (thawed and chopped)
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded Monterey Jack cheese
  • 1012 egg roll wrappers
  • Oil for frying
  • 1/2 cup ranch dressing
  • 1 medium ripe avocado (mashed)
  • 2 tablespoons buttermilk
  • 2 tablespoons chopped fresh cilantro
  • 1 & 1/2 teaspoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté red bell pepper, green onions, and jalapeño until softened.
  2. Stir in shredded chicken, black beans, corn, spinach, cilantro, cumin, chili powder, salt, and cayenne until well combined.
  3. Lay an egg roll wrapper on a clean surface and place about two tablespoons of the filling in the center. Fold and roll tightly to seal.
  4. Heat oil in a frying pan over medium-high heat. Fry eggrolls in batches for 3-4 minutes on each side until golden brown.
  5. For the dipping sauce: Mix mashed avocado with ranch dressing, buttermilk, cilantro, lime juice, salt, garlic powder, and onion powder until smooth.
