  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced

Instructions

  1. Begin by washing and chopping vegetables into bite-sized pieces and slicing the chicken into thin strips.
  2. In a bowl, mix together the soy sauce, minced garlic, and sesame oil. Add the sliced chicken to the marinade and let it sit for about 15 minutes.
  3. Preheat a large skillet or wok over medium-high heat with a splash of oil.
  4. Once hot, add the marinated chicken in a single layer. Cook for about 2 minutes without stirring until browned.
  5. After browning the chicken (about 5 minutes), add in the bell peppers, broccoli florets, and carrots. Stir-fry everything for an additional 5 minutes until the vegetables are tender-crisp.
  6. Serve immediately over rice or noodles for a complete meal.
