  • 1½ tbsp olive oil (divided)
  • 12 oz skinless boneless chicken breast, cut into bite-size pieces
  • Kosher salt and ground pepper (to taste)
  • 1 large red onion, chopped
  • 23 celery stalks, chopped
  • 3 medium carrots, peeled and chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 5 cups unsalted chicken stock
  • 8 oz fresh gnocchi
  • ½ cup almond milk (or any other milk)
  • 3 tbsp gluten free flour (or wheat flour)
  • 1 cup frozen green peas
  • 2 cups chopped green beans (frozen or canned)
  • ½ cup ground Parmesan

Instructions

  1. Heat half of the olive oil in a large pot over medium heat. Add the chicken pieces seasoned with salt and pepper. Cook for 2-3 minutes on each side until browned, then set aside.
  2. In the same pot, add the remaining oil and sauté chopped onion, celery, carrots, and herbs until tender.
  3. Pour in the unsalted chicken stock and bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Add the cooked chicken and fresh gnocchi to the pot; cook until the gnocchi float to the surface (2-3 minutes).
  5. In a bowl, whisk together gluten-free flour and almond milk until smooth. Stir this mixture into the soup along with peas and green beans. Simmer for another 10 minutes.
  6. Season with salt and pepper before serving.
