  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder

  • 1/4 tsp black pepper
  • 1 cup cooked brown rice
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 avocado, sliced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream or Greek yogurt
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper in a bowl.
  3. Rub the spice mixture onto each chicken breast evenly.
  4. Heat olive oil in a skillet over medium-high heat; sear chicken for 2-3 minutes per side until golden brown.
  5. Transfer chicken to a baking dish; bake for 20-25 minutes until fully cooked. Let rest for 5 minutes before slicing.
