  • 3 celery stalks (cut into large chunks)
  • 1 yellow onion (quartered)
  • 2 tablespoons kosher salt
  • 3 garlic cloves (crushed)
  • 1 teaspoon ground sage
  • Fresh herbs: oregano, rosemary, thyme
  • 6 whole black peppercorns
  • 1 bay leaf

Instructions

  1. Place the chicken in a large stew pot; cover with water until completely submerged.
  2. Bring to a boil, then reduce to a simmer for 30-40 minutes, skimming off any foam.
  3. Add salt, crushed garlic, sage, thyme, rosemary, oregano, black peppercorns, and bay leaf; stir.
  4. Add carrots, onion, and celery; mix gently.
  5. Cover and simmer for 12-24 hours for maximum flavor.
  6. Taste and adjust seasoning if needed.
  7. Remove chicken and vegetables; strain the broth through a fine mesh strainer or cheesecloth.
