  • 8 cups chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • ½ tsp dried sage
  • 2 tbsp olive oil
  • Salt and pepper (to taste)
  • ¼ cup fresh parsley (chopped for garnish)

Instructions

  1. Cook the wild rice separately according to package instructions.
  2. In a large pot, heat olive oil over medium heat. Add diced onions, carrots, celery, and minced garlic; sauté until soft and fragrant (about 5-7 minutes).
  3. Season chicken thighs with salt and pepper; add them to the pot along with cooked wild rice, chicken broth, bay leaves, thyme, and sage.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked through.
  5. Shred the chicken with two forks and return it to the pot. Discard bay leaves and adjust seasoning if necessary.
  6. Garnish with fresh parsley before serving.
