  • 8 oz mushrooms (sliced)
  • 1 ¼ lb boneless skinless chicken breasts
  • ½ cup uncooked white long grain rice
  • 2 cups carrots (sliced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • ¾ teaspoon EACH: dried basil, oregano, parsley
  • ¼ teaspoon EACH: dried thyme, pepper
  • Salt/Pepper

Instructions

  1. Cook the rice in chicken broth according to package instructions.
  2. Season the chicken with salt and pepper. Sear in olive oil until golden brown.
  3. Sauté onions, carrots, celery, and mushrooms until softened.
  4. Add garlic and dried herbs; stir until fragrant.
  5. Pour in chicken broth and add the bay leaf. Bring to a boil then reduce to a simmer.
  6. Return chicken to pot; simmer for about 20 minutes until cooked through.
  7. Stir in cooked rice before serving.
