  • 8 oz mushrooms
  • 1 large yellow onion
  • 1 cup low sodium chicken broth
  • ½ cup shredded Monterey jack cheese
  • Olive oil
  • Kosher salt
  • Fresh ground pepper
  • 1½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp Italian seasoning
  • 2 tbsp chopped fresh tarragon or 1 tsp dried tarragon

Instructions

  1. Preheat your oven to 375°F.
  2. Season chicken breasts with salt, pepper, garlic powder, and smoked paprika.
  3. In a large oven-proof skillet over medium-high heat, heat 1 tablespoon olive oil and sear the chicken until golden brown on both sides (about 5-6 minutes). Remove from skillet.
  4. Add remaining olive oil and sauté sliced mushrooms and onions until soft (about 3-4 minutes).
  5. Stir in Italian seasoning, chicken broth, remaining garlic powder, and tarragon into the skillet.
  6. Return seared chicken to the skillet and sprinkle with cheese.
  7. Bake for 8-10 minutes until chicken reaches an internal temperature of 165°F.
