  • 4 tablespoons unsalted butter (melted and cooled)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup honey
  • ⅓ cup dark chocolate chips
  • ¼ cup raisins
  • ¼ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix applesauce, melted butter, egg, vanilla extract, and honey until well combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Fold in chocolate chips, raisins, and walnuts.
  6. Chill the dough for at least 30 minutes.
  7. Using a cookie scoop or spoon, drop heaping tablespoons of dough onto the prepared baking sheet. Flatten slightly.
  8. Bake for about 9 to 10 minutes until golden around the edges. Let cool on the sheet for two minutes before transferring to a wire rack.
