  • 1 (30 to 32-oz) bag frozen shredded hash browns
  • 2 cups almond milk (or other milk of choice)
  • 2 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese (divided)
  • 2 cups crushed corn chips
  • 2 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Kosher salt and ground pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine frozen hash browns with Italian seasoning.
  3. In a medium saucepan, whisk together almond milk, cornstarch, onion powder, and garlic powder until smooth. Heat over medium heat until thickened.
  4. Stir in cheddar cheese and half of the Parmesan cheese until melted.
  5. Pour the cheese sauce over the hash brown mixture and stir well. Transfer to a baking dish.
  6. Top with remaining Parmesan and crushed corn chips. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 15 minutes.
  7. Let rest for a few minutes before serving.
