  • 6 medium garlic cloves
  • 5 dried guajillo chiles
  • 3 dried chiles de árbol
  • 4 whole allspice
  • 2 onions (white or yellow)
  • 1 cinnamon stick
  • 1.5 tablespoons kosher salt
  • 0.25 teaspoon black pepper
  • 6 bone-in, skin-on chicken thighs
  • 12 homemade corn tortillas
  • Tomatillo salsa

Instructions

  1. In a cast-iron skillet, char garlic cloves and dried chiles over medium-high heat for about 3 minutes until fragrant. Cool slightly, then blend with toasted allspice.
  2. Char onion wedges in the skillet until blackened on both sides, then add to the blender.
  3. Blend cooled ingredients with cinnamon stick, salt, black pepper, and water until smooth.
  4. Marinate chicken thighs in the mixture for at least one hour (up to five).
  5. Preheat grill; cook marinated chicken skin-side down for about six minutes per side until charred and cooked through (internal temp of 165°F).
  6. Rest chicken before chopping and serve in warm tortillas with tomatillo salsa.
