  • 1/2 cup salted butter, melted

  • 1 1/2 cups finely shredded carrot
  • 3/4 cup shredded coconut
  • 4 1/2 cups bread flour
  • 3/4 cup salted butter, almost melted
  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon
  • 1/2 cup heavy cream
  • 6 ounces cream cheese, softened
  • 1/3 cup salted butter, softened
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In a stand mixer bowl, combine warm milk and sprinkle yeast over top. Let it activate.
  2. Add eggs, melted butter, salt, cinnamon, and sugar. Mix in carrots and coconut.
  3. Gradually mix in about 4 cups of flour until just combined; let rest for 5 minutes.
  4. Knead on medium speed with a dough hook attachment, adding more flour as needed until smooth.
  5. Place dough in a greased bowl, cover, and let rise until doubled (about 30 minutes).
  6. For the filling, mix almost melted butter with brown sugar and cinnamon.
  7. Roll out dough into a rectangle and spread filling evenly before rolling tightly.
  8. Slice into rolls and place in a greased baking pan; let rise briefly while preheating oven.
  9. Pour warm heavy cream over the top and bake at 350°F until golden brown (20-25 minutes).
  10. Allow to cool slightly before spreading with cream cheese frosting.
