  • 1 lb medium raw shrimp (shelled & deveined)
  • 8 oz gluten-free penne pasta
  • 1 tbsp Cajun seasoning (for shrimp)
  • 1 tbsp olive oil (for shrimp)
  • 34 garlic cloves (minced)
  • 1 red onion (diced)
  • 2 bell peppers (diced)
  • 14 oz crushed tomatoes
  • Juice and zest of 1 lime
  • Kosher salt and ground pepper (to taste)
  • 3/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Cook the gluten-free penne pasta according to package instructions in salted boiling water. Drain and set aside.
  2. In a Ziploc bag, combine shrimp with Cajun seasoning and olive oil; shake to coat evenly.
  3. Heat a large pan over medium heat and cook the seasoned shrimp until pink and opaque (about 2-4 minutes). Remove from pan and set aside.
  4. In the same pan, add olive oil, sauté minced garlic for about one minute, then add diced onion and bell peppers; cook until softened.
  5. Add more Cajun seasoning and chili powder; cook for another minute until fragrant. Stir in crushed tomatoes, lime juice, zest, salt, and pepper. Simmer for about five minutes.
  6. Toss cooked pasta with shrimp in the sauce until well combined. Top with Parmesan cheese and parsley before serving.
