  • 11.5 pounds ribeye steak (thinly sliced)
  • 4 cups sushi rice
  • 2 tablespoons olive oil
  • 1 tablespoon Gochujang sauce
  • 1 tablespoon rice apple vinegar
  • 4 tablespoons soy sauce
  • 2 teaspoons honey (or granulated sugar)
  • 2 teaspoons garlic (minced)
  • 1 tablespoon shallot (minced)
  • 2 teaspoons fresh ginger (grated)
  • 1 teaspoon chili garlic sauce
  • optional red pepper flakes, to taste
  • optional 1/2 tablespoon cornstarch (to help thicken)
  • 12 cups kimchi of your choice
  • 2 cups English cucumbers (sliced)
  • 1/4 cup green onions (sliced)
  • sesame seeds (for garnish)

Instructions

  1. Prepare the marinade: Mix olive oil, Gochujang, soy sauce, rice vinegar, honey, garlic, shallot, ginger, chili garlic sauce, and optional cornstarch in a jar and shake well.
  2. Marinate the beef by coating thinly sliced ribeye with one-third of the marinade; let sit for 15-30 minutes.
  3. Cook sushi rice according to package instructions.
  4. In a skillet over medium-high heat with butter, sear marinated beef strips for 30-60 seconds per side until browned.
  5. Return all beef to the pan with remaining marinade; add green onions and sesame seeds.
  6. Assemble bowls with sushi rice topped with bulgogi beef, kimchi, cucumbers, and extra green onions.
